Valentine’s Strawberry Mousse Cake Recipe

Ingredients
2 Large Eggs at Room Temperature
2.1 oz/60g Sugar
1/2 Tsp Vanilla Extract
2.1 oz/60g Sifted flour

Steps:
1-Beat eggs on medium speed
2-Add sugar and increase to high speed
3-Add the vanilla extract
4-Add the flour
5-Gently fold the flour until all ingredients are well incorporated
6-Transfer the mixture into a prepared pan with parchment paper
7-Bake at 355°F/180 °C for 10-12 minutes
8-Let it cool down
9-Dust with powdered sugar

Strawberry Mousse Filling
Ingredients
14 oz/400g Strawberries
5.6 oz/160g Sugar
40 mL Water
3 Large Egg Whites
400 mL Heavy Cream
1/2 Tsp Fresh Lemon Juice

0.6 oz/16g Gelatin
2 Tsp Hot Water

Steps:
1-Combine 1 tsp of water with gelatin and set aside
2-Blend the strawberries and set aside
3-In a stand mixer, whisk the egg whites on low speed
4-Meanwhile, in a saucepan add sugar and water
5-Place it over a hot pot on a medium high
6-Add lemon juice
7-After reaching boiling point(240-249°F 115-120°C)without thermometer keep it boiling for an extra 2 minutes
8-Add the syrup in a stream and increase the speed to high
9-Keep whisking until it reaches soft peak
10-In a bowl, whip the cream on low speed until it increases in volume(don’t over whip)
11-Add strawberries
12-Add hot water to the gelatin and mix, then add it to the mixture
13-Add 1 scoop of the meringue to the mixture and mix
14-Add the mixture to the meringue and mix well
15-Pour the mixture into the pan
16-Place it in the fridge for a minimum of 2 hours

Glaze
Ingredients
2.5 oz/70g Sugar
40 mL Water
1.4 oz/40g Blended Strawberries
0.5 Tsp/2g Gelatin

Steps:
1-In a saucepan, mix sugar, water, and strawberries
2-Stir and bring it to boil
3-Add the gelatin and stir constantly until it dissolves
4-Let it cool for 5 minutes and scoop it onto the cake
5-Place it in the fridge for a minimum of 1 hour
