Gluten-Free Cinnamon Walnut Coffee Cake
Recipe
Pan size 4”-10 cm
Ingredients:
4 Large Eggs Room Temperature
9.5 oz/270g Sugar
1 Tsp Vanilla Extract
270 mL Vegetable Oil
4.8 oz/135g Sour Cream
8.5 oz/240g Gluten-Free Flour
1.4 oz/40g Cornstarch
2.1 oz/60g Potato Starch
0.4 oz/10g Baking Powder
0.3 oz/8g Cinnamon
2.5 oz/70g Chopped Walnuts

Steps:
1-Whisk the eggs and sugar on high speed
2-Whisk until it triples in volume
3-Add Vanilla
4-Add the vegetable oil in a stream
5-Add the sour cream
6-Add gluten-free flour, cornstarch,potato starch, and baking soda
7-Mix on low and gradually increase the speed to high until all is well combined
8-In a separate bowl combine cinnamon and chopped walnuts
9-Oil sp[ray the pans and fill them with the batter
10-Add the mix of cinnamon and chopped walnuts and cover it with the batter
11-Bake at 355 F°/180 C° for 30 minutes (Baking temperature may vary depending on the oven)
12-Let it cool
