Citroen-maanzaadkoffiecake
Recept voor koffiecake met citroen en maanzaad
Ingrediënten:
9 oz/275 g boter RT
300 g suiker
5 grote eidooiers
5 grote eiwitten
1 citroenschil
2 theelepels vanille-extract
100 ml plantaardige olie
300 ml melk
50 g maanzaad
625 g bloem
0,5 oz/15 g bakpoeder

Stappen:
1-Add the poppy seeds to the milk and let them soak for an hour
2-Combine butter, sugar, and egg yolks; mixing on low and gradually increase the speed to medium
3-Add the egg whites in two batches, and add the lemon zest and vanilla extract
4-While mixing, stream the oil
5-Lower the speed to medium low, then gradually stream the poppy seeds/milk mixture
6-Add the flour, and baking powder and mix until all is well combined
7-Transfer the batter into a greased bundt pan, and bake at 355 Fº/180 Cº for 1 hour ( Baking temperature may vary depending on oven)
8-Remove from heat and let it cool
9-Poke the cake, and squeeze the syrup from the bottle to soak it completely, then set the cake aside to cool completely
10-Place a pan or a plate over the bundt pan and invert to release the cake, and set aside while preparing the glaze
11-Pour the sugar glaze onto the cake and spread it evenly
12-Decorate with thin strips of lemon peel (prepared by mixing finely cut lemon peels in sugar, then removing them from the sugar and baking at 175 Fº/ 80 Cº for 10 minutes)
Sugar Glaze Ingredients:
7.1 oz/200 g Powdered Sugar
1 1/2 Tablespoon Fresh Lemon Juice
1 1/2 Tablespoon Cold Water
Stappen:
Combine powdered sugar, lemon juice, and water, then mixing constantly until it thickens
