3.5 oz/100g Butter Room Temperature
2.8 oz/80g Sugar
2 Large Egg Yolks RT
2 Large Egg Whites RT
1 Tsp Vanilla Extract
40 mL Milk
4.6 oz/130 Sifted Flour
1 Tsp Baking Powder
1.4 oz/40g Chopped Pecan

1-Combine butter, sugar and egg yolks
2-Mix and gradually increase the speed to medium high for 3-4 minutes
3-Gradually add the egg whites
4-Add the vanilla extract, milk, and mix until all is well incorporated
5-Gradually scrap between additions
6-Add flour, baking powder,and chopped pecan last
7-Mix until all is well combined
8-Mix the batter by hand and pour it in a greased pan
9-Cover with pecan
10-Bake at 355°F / 180°C for 40 minutes (Baking temperature may vary depending on the oven)
11-Allow the cake to cool in the pan for 15-20 minutes
