Pecan Pie

Pecan Pie, Easy and Delicious Pecan Pie Recipe
10 “/ 26 cm Ring/Pan
Serves 8

Pie Crust Ingredients:
7.1 oz/200g Butter
4.9 oz/140g Powdered Sugar
Pinch of Salt
2 Medium Egg Yolks
2 Medium Egg Whites
1/2 Tsp Vanilla Extract
1.4 oz/40g Ground Pecan
11.6 oz/330g Sifted Flour

Notes

Steps:
1-Mix on low butter and powdered sugar until it is well combined
2-Add salt, egg yolks and gradually increase the speed to medium
3-Scrap from time to time the sides and bottom of the mixer
4-Add the egg whites and vanilla extract
5-Mix well until its well combined
6-Add the grounded pecans and the flour
7-Mix until it forms one mixture without overworking the dough
8-Cover the dough with plastic wrap and place it in the fridge for 30 minutes
9-Roll the dough and spread it larger than the ring/pan size
10-The dough should be 1/8 “ thick
11-Roll the dough around the rolling pin and then unroll over the tarte pan
12-Gently press with your fingers into the sides
13-Trim excess dough
14-Dock the dough
15-Place a parchment paper on top of the dough and fill it with beans
16-Bake it at 355 °F/180 °C for 25 minutes(Baking temperature may vary depending on the oven)
17-Let it cool down
18-Fill it with the pecan mixture
19-Bake it once again at 355 °F/180 °C for 8 minutes

Filling Ingredients:
8.8 oz/250g Sugar
1 Tsp Water
Pinch of Cream Tartar
125 mL Heavy Cream
10.6 oz/300g Pecans

Steps:
1-In a saucepan combine sugar, water and cream tartar
2-Place it on medium heat to make a caramel
3-When it’s caramelized add the cream (Please be cautious when pouring the cream, it is extremely hot and may splash)
4-Stir constantly
5-Add the pecans and mix well
