Peach Tartelettes
Peach Tartelettes Recipe
Ingredients:
10.6 oz/300g Butter RT
7.1 oz/200g Powdered Sugar
3 Medium Eggs RT
1/2 Tsp Salt
1 Tbsp Vanilla Extract
2.1 oz/60g Almond Flour
4 Cups/500g all-purpose Flour

Steps:
1-In a stand up mixer combine butter and powdered sugar
2-Stir and gradually increase the speed to medium
3-Scrape the sides and add the eggs one at at time
4-Add salt and mix on medium speed
5-Add vanilla extract and mix until it’s well combined
6-Add almond flour and all-purpose flour and mix until it’s well combined
7-Wrap the dough with plastic and place it in fridge for 30 minutes
8-Remove from fridge and cut in half (you can keep the rest of the dough for 5 days in the fridge)
9-Roll one half into an even thickness
10-Cut the dough with a 4.3”/11 cm round cutter
11-Place each dough in a 3.5”/9 cm tarte ring
12-Gently press into the sides
13-Dock the dough with a fork
Filling
Ingredients:
3.5 oz/100g Butter RT
3.5 OZ/100g Sugar
2 Large egg Yolks
2 Large Egg Whites
1 Tsp Vanilla Extract
3.5 oz/100g Almond Flour
1.8 oz/50g all purpose-Flour
7 Halves Peaches in Syrup
Steps:
1-Mix butter, sugar, and egg yolk on low speed until it’s well incorporated
2-Mix well and add the egg whites and increase the speed to medium
3-Add vanilla extract
4-Add almond flour and all-purpose flour
5-Mix until all ingredients are well combined
6-Place the batter into a pastry bag and set aside
7-Pipe into the tarte
8-Place half a peach in the center
9-Bake at 355 F°/180 C° for 35 minutes
10-Brush with a mix of 2 Tbsp of Honey and 1 Tsp of water
11-Let it cool
