Serves 8
Pie Crust

Ingredients
7 oz/200g Butter
3.5 oz/100 Sugar
1 Large Egg Room Temperature
1 Tsp Vanilla Extract
1 Tsp Lemon Zest
10.6 oz/300g Flour Sifted

Method

Notes

Steps:
1-Mix butter and powdered sugar until it is well combined
2-Scrap the sides and the bottom of the mixer
3-Add the egg
4-Add the vanilla
5-Add the lemon zest
6-Make sure to scrap from time to time the sides and bottom to make sure all is well
combined
7-Add the flour
8-Mix until it forms one mixture without overworking the dough
9-Cover the dough with plastic wrap
10-Place it in the fridge for 30 minutes
11- Roll the dough and spread it larger than the pan size
12-The dough should be 1/8 “ thick
13-Roll the dough around the rolling pin and then unroll over the tarte pan
14-Gently press with your fingers into the sides
15-Trim excess dough and set the scraps aside.
16-Dock the dough with a fork
17-Place it to rest in the fridge for 15 minutes

Filling
Ingredients
2 oz/57g Butter
2 oz/57g Dark Chocolate 60%
2.8 oz/80g Maple Syrup
1 oz/28g Walnuts
1 oz/28g Flour
1 Large Egg Room Temperature

Step:
1-In a saucepan combine butter and maple
2-Place the mixture over medium heat and stir
3-Bring it to boil
4-Remove the pan from heat and stir constantly for 30 seconds
5-Add the chocolate
6-Once the chocolate melts add the walnuts
7-Add the flour
8-Add the egg
9-Pour the chocolate mix into the tarte pan
10-Bake in a preheated oven 340 °F/170 °C for 20-25 minutes
11-Let the tarte cool down

Decoration
Ingredients
1 Egg yolk
1 drop of yellow gel food color
1 drop of red gel food color

Steps:
1-Brush egg yolk on third of the cookies
2-It’s optional to add food coloring
3-Add the egg yolk to the yellow gel color and blend
4-Add the mix of egg yolk and the yellow color to the red gel and blend
5-Bake 340 °F/170 °C for 15 minutes
6-Let it cool down.
