Sugar-Free Coffee Cake Recipe, Lower Calorie Coffee Cake

原料:
7.8 oz/220g Butter RT
5.3 oz/150g MonkFruit Sweetener for baking(with Erythritol)
4 Large Egg Yolks
4 Large Egg Whites
1/2 Tsp Lemon Juice
5.6 oz/250g Sifted Flour
1 Tsp Baking Powder
40 mL Vegetable oil
1 1/2 Tbsp Cacao Powder

1-Mix butter, sugar-free sweetener, and egg yolks on low speed
2-Gradually increase the speed to medium high
3-Add the egg whites in two batches and increase the speed to high
4-Add lemon juice
5-Combine flour and baking soda and add to the batter
6-Add the vegetable oil and mix on high for few seconds
7-Transfer 3/4 of the batter to the pan
8-Add the cacao powder to the remaining batter and mix well
9-Fill it in a piping bag and pipe 3 strips on top
10-Swirl using a fork
11-Bake at 355 F°/180°C for 40 minutes(Baking temperature may vary depending on the oven)
