How To Make Soft Olive Bread Recipe With Crispy Crust

2 Loaves of Bread

8 cups/1 kg All-purpose Flour sifted
2 Tbsp/20g dry Yeast
2 Tbsp/40g Sugar
4 Tsp/20g Salt
45 mL Olive oil
5 oz/140g sliced black Olives

Yeast-Flour-Sugar
Mix flour, yeast and sugar with ½ of the water on a stand-up mixer on low speed
Add salt and the rest of the water
Mix on low speed for 3-4 minutes
Add olive oil
Add sliced olives
Knead on medium speed for 2 minutes and until the dough is smooth and elastic
Cover the dough and let it rest for 30 minutes
Divide the dough in half
Knock the dough to remove pockets of air
I am shaping one piece into a load and the other piece into a ball
Cover the dough and place to proof for about an hour and a half
Oil brush the dough with olive oil
Score the dough
Preheat the oven to 390°F/200°C
Bake for 45 minutes
Let the bread cool on a wire rack until it reaches room temperature
