Pumpkin Walnut Cake

Pumpkin Walnut Cake Recipe:

8 “/ 20 cm Ring/Pan
Serves 8-12
Ingredients:
3 Large Eggs Room Temperature
8 1/2 oz/200g Sugar
7 oz/100 mL Vegetable Oil
5 1/2/155g Pumpkin Puree
1 Tsp/6g Baking Soda
1 Tsp/6g Baking Powder
3 oz /85g chopped Walnut
1 Tbsp/8g 8g Cinnamon
1.6 Cups/ 200g Flour

Steps:
1- Mix cinnamon with chopped walnuts
2-Add Baking powder and Baking Soda to the Flour
3-Whisk the eggs and gradually add the Sugar until it dissolves
4-Once it doubles down add gradually the oil
5-Add the Pumpkin Puree in two batches and mix until it’s well combined
6-Add the walnuts and cinnamon mix
7-Add flour and mix until it’s well incorporated
8-Gently fold the flour into the mixture
9-Bake in a preheated oven 355°F/180 °C for 40 minutes
10-Let it cool down until it reaches room temperature
Filling and Frosting
Ingredients
16 oz/450g Butter
32 oz/900g Powdered Sugar
1/2 Tsp Cinnamon
5 Tbsp/65g Pumpkin Puree
Steps:
1-Mix butter and powdered sugar on low speed
2-Gradually increase the speed until it’s well combined
3-Add Pumpkin Puree
4-Add cinnamon
5-Mix on high until all ingredients are well combined
Add 1/2 Tsp of cinnamon to the frosting (optional)
Decoration
Ingredients
4.4 oz/ 125g Sugar
2.7 oz/75g Pumpkin Puree
1/2 Cup/75mL Water
1 Tsp/4g Gelatin
Steps:
1-Mix 1 Tsp of water with the gelatin and let it sit until it becomes a gel
2-In a saucepan mix water, sugar and pumpkin puree
3-Place the mixture over medium heat and stir
4-Bring it to boil
5-Add the gelatin and constantly stir until it dissolves
6-Continue to stir until it cools down to room temperature
7-Fill in the cake
8-Place it in the fridge for 30 minutes
