Gluten-Free Blueberry Cookies!Handmade Gluten-Free Cookies, Quick & Easy Recipe
Makes 24 Cookies
Ingredients:
3.5 oz/100g Butter Room Temperature
4.2 oz/120g Sugar
2  Large Egg Yolk Room Temperature
2 Large Egg Whites Room Temperature
1 Tsp Vanilla Extract
6.3 oz/180g Gluten-Free Flour
0.7 oz/20g Potato Starch
1/2 Tsp Baking Soda
6.3 oz/180g Blueberries
Method
Notes
Steps:
1-Combine butter, sugar and egg yolk
2-Mix until the sugar is dissolved
3-Gradually add the egg whites
4-Add the vanilla extract and mix well
5-Add the gluten-free flour, potato starch and baking soda
6-Gently mix until all is well incorporated
7-Add the blueberries and mix
8-Cover and place it to rest in the fridge for 15 minutes
9-Shape into balls with a 1.5 Tbsp cookie scoop
10-Bake at 375°F/190 °C for 17 minutes (Baking temperature may vary depending on the oven)
11-Let it cool down
