Glazed Carrot Cake Recipe
10“/ 26 cm Ring
Serves 12
Ingredients:
4 Large Eggs
10.6 oz/300g Sugar
130 mL Vegetable Oil
8.5 oz/240g Shredded Carrots
10.2 oz/290g Sifted Flour
0.4 oz/10g Baking Soda
0.4 oz/10g Baking Powder
4.2 oz/120g Chopped Walnuts
1/2 Tbsp Cinnamon

Steps:
1-In a large bowl whisk the eggs
3-Gradually add sugar and whisk until it triples in volume
4-Gradually add vegetable oil
5-Once it’s well combined add the shredded carrots
6-Mix well and add flour, baking soda, and baking powder
7-Gently fold until it’s well incorporated
8-Add the walnut and cinnamon mixture
9-Pour in the pan
10-Bake at 355 F°/180 C° for 45 minutes
11-Let it cool
12-Spread the cream around the sides and top
13-Place the cake in the fridge until you prepare the glaze
Filling:
200 mL Heavy Cream
steps:
1-Whisk heavy cream on low for few seconds
2-Increase the speed to high for 3-5 minutes
Glaze Ingredients:
300g Powdered Sugar
2 Tsp Lemon Juice
15 mL milk
1/2 Shredded Carrots
Steps:
1-Mix powdered sugar, lemon juice, and milk
2-Mix well and add the shredded carrots
3-Pour it onto the cake
