Peanuts Pie Recipe

Pie Crust Ingredients:
7.1 oz/200g Butter
3.5 oz/100g Powdered Sugar
2 Medium Egg Yolks
2 Medium Egg Whites
9.9 oz/280g Flour
0.7g/20g Cacao Powder
1/2 Tsp Rum Extract

1-Mix on low butter, powdered sugar and egg yolks until it is well combined
2-Add the 4 egg whites in two batches and gradually increase the speed to medium high
3-Scrap from time to time the sides and bottom of the mixer
4-Add rum extract and mix well
5-Add the flour and the cacao powder
6-Mix until it forms one mixture without over mixing
7-Wrap the dough with plastic and let it rest in the fridge for 30 minutes
8-Roll the dough and spread it larger than the ring/pan size
9-The dough should be 1/8 “ thick
10-Roll the dough around the rolling pin and then unroll over the tarte pan
11-Gently press with your fingers into the sides
12-Trim excess dough and dock it
13-Place a parchment paper on top of the dough and fill it with beans(to keep the dough in place)
14-Bake it at 355 °F/180 °C for 20 minutes(Baking temperature may vary depending on the oven)
15-Let it cool down
16-Fill the pie with the peanut mixture and bake it once again at 355 °F/180 °C for 10 minutes(Baking temperature may vary depending on the oven)

Filling Ingredients:
3.5 oz/100g Sugar
1.4 oz/40g Honey
40 mL Heavy Cream
1.4 oz/40g Butter
1.4 oz/40g Glucose
12.3 oz/350g Roasted Peanuts
