Danish Cheese Bites
Ingredients:
17.6 oz/500g Sifted Flour
0.3 oz/8g Yeast
1.1 oz/30g Brown Sugar
1.1 oz30g Sugar
2 Large Egg Yolks
3.5 oz/100g Butter
1 Teaspoon Vanilla Extract
200 mL Cold Water
0.3 oz/8g Salt

Steps:
1-Stir flour, yeast, brown sugar and sugar
2-Gradually add water
3-While stirring add the egg yolks, butter and the vanilla extract
4-Increase the speed to low
5-Mix until all ingredients are well combined
6-Brush the bowl and the dough with vegetable oil, cover, and place it in the fridge for at least 2 hours
Filling:
8.8 oz/250g Cream Cheese
1 Large Egg Yolk
0.7 oz/20g Flour
1.8 oz/50g Sugar
1 Tsp Vanilla Extract
Steps:
1-Blend the cream cheese with the egg yolk, flour, sugar, and vanilla extract
2-Transfer the cheese mixture to a pastry bag and refrigerate it until ready to use for the dough
3-Roll the dough to 1/8 inches thickness,then cut it using a cutter, I’m using a 2.5 inch size, but any size works
4-Arrange the cut dough pieces on a pan lined with parchment paper
5-Pipe the cheese mixture onto the center of the dough rounds
6-Allow to proof for 30 minutes
7-After proofing, brush the dough with egg wash and bake at 355 °F/180 °C for 20 minutes (Baking temperature may vary depending on the oven)
8-Let it cool
8-Decorate the top with Sugar glaze (1.8 oz/50g Powdered Sugar, 1 Teaspoon Milk, 1/4 Lemon Juice)
