Blueberry Tart
One of my favorite staples paired with any occasion and can be championed with a hot cup of coffee. Fresh blueberries and a touch of whipped cream is all you need to have a delicious tart treat that’s light on your stomach.
Blueberry Tarte
Recipe
4“/10 cm by 13.5” by 34 cm
Serves 6-8

Ingredients
7 oz/200g Butter
3.5 oz/100 Sugar
1 Large Egg Room Temperature
1 Tsp Vanilla Extract
1 Tsp Lemon Zest
10.6 oz/300g Flour Sifted
Steps:
1-Mix butter and powdered sugar until it is well combined
2-Add the egg
3-Scrap the sides and the bottom of the mixer
4-Add the vanilla
5-Add the lemon zest
6-Add the flour
7-Mix until it forms one mixture without overworking the dough
8-Cover the dough with plastic wrap
9-Place it in the fridge for 30 minutes
Filling Pastry Cream (Crème Patissière)
Ingredients
0.85 Cup/200 mL Milk
1.4 oz/40g Sugar
0.7 oz/20g Corn Starch
1 Egg Yolk
1 Tsp Vanilla Extract
1.1 oz/30g Butter RT
2.7 oz/75g Blueberries
Steps:
1-In a saucepan pan mix 3/4 of milk with sugar
2-Mix the egg yolk and the corn starch with the remaining of the milk
3-Place the saucepan on medium heat and stir until it boils
4-Add some of the boiling milk into the egg/milk mixture to temper
5-Pour the egg/milk mixture into the hot milk and add the vanilla extract
7-Bring it to a boil while constantly stirring until it thickens
8-Remove from heat and pour it into the mixer bowl.
9-Mix on low and gradually add the butter in batches
10-Keep mixing and gradually add the speed to medium until the mixture is well combined
11-Once the mixture cools down add the blueberries
12-Mix until it’s well combined
13-Cover the creme and keep it aside in room temperature
Preparation of the Tarte
1-Roll the dough and spread it larger than the pan size
2-The dough should be 1/8 “ thick
3-Roll the dough around the rolling pin and then unroll over the tarte pan
4-Gently press into the sides
5-Trim excess dough
6-Dock the dough with a fork
7- Fill the tarte
8-Bake it in a preheated oven 340 °F/170 °C for 30 minutes
9-Let it cool
Glaze
Ingredients
4.4 oz/125g Sugar
1/2 Cup/75 mL Water
2.7 oz/75g Blended Blueberries
1 Tsp/ 4g Gelatin
Steps:
1-Mix 1 Tsp of water with the gelatin and let it sit until it becomes a gel
2-In a saucepan combine sugar and water
3-Place it over medium heat and add the blueberries
4-Stir until you bring it to boil
5-Add the gelatin and stir constantly until it dissolves
6-Let it cool for 5 minutes and pour it into the tarte
7-Place it in the fridge for an hour
