Shingled Apple Cake Recipe

8 “/ 20 cm Ring/Pan
Serves 8

Ingredients:

8.8 oz/250g Butter
3.5 oz100g Brown Sugar
2.5 oz/70g Molasses
5 Large Egg Yolks
30 mL Apple Juice(100% apple juice no sugar added)
5 Large Egg Whites
1 Tbsp Cinnamon
11.3 oz/320g Sifted Flour
0.3 oz/9g Baking Powder
3 Gala Apples

Steps:
1-In a stand up mixer add butter, brown sugar, and molasses
2-Mix on low and add the egg yolks
3-Gradually increase to medium speed and add the apple juice
4-While mixing, add the egg whites
5-Add the cinnamon
6-Add the flour and baking powder and mix until all ingredients are well combined
7-Add the apples to the mixture and fold (peeled and cut to cubes)
8-Pour in a greased pan and bake at 355°F/180 °C for 40 minutes
9-Let it cool down
