Mediterranean Pressed Bread
Recipe
10 Pieces
Ingredients:
4.3/4 cups / 600g All Purpose Flour Sifted
1 Tbsp /10g Dry Yeast
1 Tbsp /14 g Molasses
20 mL Olive Oil
1 Tbsp /16 g Salt
2 2/3 Cup /350 mL Cold Water
1/4 Cup /32 g Dried Oregano

Steps:
1-Yeast – Flour
2-Mix the flour and yeast with 1/2 0f the water on low speed
3-Add molasses
4-Gradually add the rest of the water until ingredients are combined
5-Add salt
6-Add olive oil
7-Adjust the speed to medium low
8-Knead for 2-3 minutes until the dough is smooth
9-Place the dough in lightly oiled bowl
10-Oil brush the dough and cover it with plastic wrap
11-Put the dough in the fridge for 2 hours
12- Pull the dough into itself and knock it to remove pockets of air
13-Weigh the dough and divide it into 10 equal pieces
14-Shape the dough into balls
15-Place 5 rolls in each tray and oil brush them
16-It’s important to oil brush around the dough
17-Cover the dough on both trays with parchment paper
18-Place one tray on top of the other and press down
19-Place a tray on top
20-Press the dough with a heavy weight for 45 minutes
21-I am using a stand up mixer that weighs 26 Lb /12 K
22-Sprinkle with oregano
23-Place it to proof in room temperature for 30 minutes
24-Bake in a preheated oven F°355 /C°180 for 35 minutes
