5.3 oz/150g Butter Room Temperature
4.6 oz/130g Sugar
1/2 Tsp Salt
4 Medium Egg Yolks
1 Tbsp Vanilla Extract
0.4 oz/10g Baking Powder
7.1 oz/200g Sifted Flour

Steps:
1-Combine Butter, sugar, and salt and mix on low and gradually increase to medium
2-Add the egg yolk and the vanilla extract
3-Add the flour and mix until all is well combined
5-Wrap the dough with plastic and place it in the fridge for 30 minutes
6-Roll out the dough, it should be around 1/8 “ thick
7-Cut out 3 pieces using the 8”/20cm ring.
8-Use the remaining dough to shape into small balls and place them in the freezer for 10 minutes
9-Place one piece of dough into the ring and brush it with egg yolk
10-Take a second piece and cut it using the 6:/15 cm ring (use the outer piece)
11-Place the outer piece on top of the 1st piece
12-Pipe with apricot filling/jam (as needed)
13-Cover it with the last piece and brush it with egg yolk
14-Place the small balls in the center
15-Bake at 355 °F/180 °C for 25 minutes (Baking temperature may vary depending on the oven)
